AUS-10 steel is the highest grade in Aichi Steel’s AUS series of Japanese stainless steels, containing about 1.0% carbon plus chromium and a touch of vanadium. It performs in the same class as 440C: noticeably better edge retention than AUS-8, good toughness, strong rust resistance, and easy sharpening.

That is the short answer. The longer answer comes from the workbench. We have been hand-forging knives since 1993, and AUS-10 has earned a permanent spot in our shop. Our current wholesale catalog runs to about 1,100 one-of-a-kind pieces, and 84 of them are AUS-10 blades. That is more than our AUS-8 count of 65, and it sits alongside 753 Damascus pieces, 81 in 440C, 70 in ATS-34, and 66 in D2. We do not keep a steel in rotation at that volume unless it keeps proving itself under the hammer and in customers’ hands.

Here is what AUS-10 actually is, what it does well, and how it compares to the steels buyers most often weigh it against.

What Is AUS-10 Steel?

AUS-10 comes from Aichi Steel in Japan, the same maker behind AUS-6 and AUS-8. The number roughly tracks the carbon content: AUS-6 carries about 0.6% carbon, AUS-8 about 0.75%, and AUS-10 about 1.0%. That makes AUS-10 the top of the series, the grade built for people who want real edge performance without leaving stainless territory.

In plain terms, the recipe breaks down like this:

  • Carbon, around 1.0%. Carbon is what lets steel harden. More carbon means the blade can reach higher hardness in heat treat, which translates to a keener edge that lasts longer.
  • Chromium, around 13 to 14%. This is what makes it stainless. Anything above roughly 13% free chromium gives strong corrosion resistance, so AUS-10 shrugs off moisture, fruit acids, and game-field mess.
  • Vanadium, a small addition. This is the quiet advantage of the AUS series. Vanadium forms very hard carbides and keeps the steel’s grain fine. Fine grain means a crisper, more stable edge and better toughness at a given hardness.
  • Supporting cast. Small amounts of molybdenum, nickel, manganese, and silicon round out hardenability and toughness.

How AUS-10 Performs

Numbers on a spec sheet only matter if they show up at the edge, so here is how AUS-10 behaves in use.

Edge taking. AUS-10 gets sharp fast. The fine grain from the vanadium addition lets it take a screaming, almost carbon-steel-like edge, which is one reason Japanese kitchen knife makers have leaned on it for years.

Edge holding. With proper heat treat, AUS-10 typically lands around 58 to 60 HRC and holds a working edge well through a full day of processing game or a long prep session at the cutting board. It is a clear step up from AUS-8 here.

Toughness. For a stainless steel at this hardness, AUS-10 is respectably tough. It tolerates lateral stress, light batoning, and hard cutting without chipping, provided the edge geometry is sensible.

Corrosion resistance. Very good. With 13% or more chromium, AUS-10 handles wet, acidic, and bloody work without staining, which matters more than most buyers admit. A steel you are not afraid to use gets used.

Sharpenability. This is the trait our customers thank us for. Unlike some high-carbide super steels that fight the stone, AUS-10 responds to basic whetstones, ceramic rods, and even field sharpeners. You do not need diamond plates or a sharpening service to keep it hair-popping sharp.

AUS-10 vs AUS-8: What the Carbon Jump Buys

This is the most natural comparison, since they are siblings from the same mill. We forge both, and the difference is easy to describe: the jump from about 0.75% carbon to about 1.0% carbon buys hardness, and hardness buys edge retention.

In practice, an AUS-8 blade wants a touch-up sooner. It is still an honest, tough, easy-care steel, and we covered it in depth in our AUS-8 steel guide. But when a hunter tells us the knife needs to get through two deer without a stone, or a cook wants an edge that survives a week of prep, we reach for AUS-10.

What you give up is minimal. AUS-10 is marginally harder to sharpen than AUS-8, but both are among the friendliest steels on a stone. Toughness is close between them at sensible hardness. The price difference on raw stock is modest. That asymmetry, meaningful gain for tiny cost, is why our catalog now carries 84 AUS-10 pieces against 65 in AUS-8. Demand followed performance.

AUS-10 vs 440C: Very Close Cousins

Put AUS-10 and 440C side by side on paper and they nearly overlap: both around 1.0% carbon, both high-chromium stainless, both capable of 58 to 60 HRC. They belong to the same class, and anyone telling you one categorically crushes the other is selling something.

The honest differences are small. AUS-10 includes vanadium, which 440C lacks, so AUS-10 tends toward slightly finer grain, a slightly crisper edge, and a touch more wear resistance. 440C carries a bit more chromium in most specs, so it can edge ahead marginally on corrosion resistance and takes a brilliant mirror polish, one reason we still keep 81 pieces of 440C in the catalog.

Here is the part that matters: heat treat decides this matchup. A carefully heat-treated 440C blade will outcut a sloppily treated AUS-10 blade every single time, and the reverse is just as true. Soak temperature, quench, and tempering do more for real-world performance than the two or three tenths of a percent that separate these steels on a datasheet. Buy the maker, not the name on the steel.

AUS-10 vs D2: Stainless Convenience vs Tool-Steel Wear

D2 is a different animal. It is a semi-stainless tool steel with roughly 1.5% carbon and big, hard chromium carbides. In pure wear resistance, D2 beats AUS-10: it holds a working edge longer under abrasive cutting like cardboard, rope, and hide.

But D2 collects tolls for that. It is harder to sharpen, its coarser carbide structure means the edge never gets quite as fine, and its chromium is mostly tied up in carbides, so it can stain and spot rust if neglected. AUS-10 flips those trade-offs: a keener edge, faster sharpening, true stainless behavior, and better toughness, in exchange for somewhat shorter edge life under heavy abrasion.

What AUS-10 Is Best For

Given that balance sheet, AUS-10 shines in three roles:

  • Hunting knives. Field dressing is wet, acidic, abrasive work far from a sharpening bench. AUS-10’s stain resistance, toughness, and easy touch-ups make it a natural fit, which is why it appears throughout our hunting knife collection.
  • Kitchen blades. The fine grain takes the thin, keen edge that food prep rewards, and the stainless chemistry laughs at onions, citrus, and tomatoes. It is a proven choice for a hard-working chef knife.
  • Hard-use EDC. A pocket knife lives in sweat, lint, and daily abuse. AUS-10 handles all three and comes back sharp after two minutes on a stone.

After three decades of forging, we will tell you a mildly unpopular truth: steel-name shopping is the least important part of buying a good knife. Between two blades of AUS-10, the one with the better heat treat and smarter geometry will outperform the other so decisively you would swear they were different steels.

Caring for an AUS-10 Blade

AUS-10 asks very little. Rinse and dry it after wet work, especially after salt, blood, or fruit acids. Strop or touch up on a fine stone before the edge goes truly dull, since maintaining an edge is always easier than rebuilding one. Store it dry, out of the leather sheath if humidity is high, with a light film of oil on the blade for long-term storage. That is the whole regimen. AUS-10 is what a sensible upgrade looks like. It steps clearly past AUS-8 in edge retention, stands shoulder to shoulder with 440C, and trades a little of D2’s wear resistance for a keener edge, true stainless ease, and far friendlier sharpening. It is not the flashiest name on the market, and that is fine. It is the steel we reach for when a customer wants a knife that cuts hard, cleans up easy, and comes back sharp fast.
